RENEE'S LOADED BAKED POTATO SOUP INGREDIENTS: 6 lg Idoho potatoes 1 stick butter I md yellow onlon 4 stocks celery 32 oz chicken broth 16 oz sour crean 6 Green onlons 2 cups shredded cheese 8 slices of bacon DIRECTIONS: Peel & cube potatoes, place in lorge pot & pour in chicken broth. Add water to 2"above potatoes Place butter in skillet & melt on low Dice onion & celery, add to butter & cook until softened, set aside. Cook bacon until crispy & chop Into bits. Cut green onion tips for garnish After potatoes are cooked, remove 2 cups of potatoes (no broth) Place 2 cups potatoes in a blender, add % cup sour cream. Blend until smooth Place smooth potato mixture back into the pot of cooked potatoes Add cooked onions & celery and butter to pot of potatoes. Add salt & white pepper to taste & mix thoroughly.
